Slow Cooker Chicken

The Crock Pot is a staple in our kitchen.  I love that I can cook large amounts of food, such as chicken, with little effort.  This is super simple and I highly recommend using the slow cooker as a tool for weekly meal prep.  I definitely don’t have a lot of time on the weekends (or ever) to spend several hours doing food prep.  This is a great option to save your time and sanity.  Your future self will thank you.

I have 3 slow cookers… I may have a problem.  One is small and perfect for dips and smaller amounts of things like rice.  One is the traditional style, with a nob that turns to 4 settings: Off, High, Low, Warm.  It works perfectly fine.

My most frequently used has a digital timer.  For this recipe I set the timer for 4 hours and let it rip.  When the timer runs out, it automatically turns to warm.  Great for days when you set it and leave the house knowing you won’t be back before your delicious concoction is done cooking.

If you don’t have a digital slow cooker, set the heat to low and cook for 6 hours.  It can go a little longer as well, but the chicken may be a it dry.

I typically make this pretty simple with just salt and pepper, but play around with some spices that suit your taste.  It you are going to use it with pasta, throw on some Italian seasoning.  Mexican? a little taco or fajita seasoning.  Maybe just some garlic.  Have fun with it – food isn’t supposed to be boring!

Simple Slow Cooker Chicken to prep quickly and use in a variety of recipes

Ingredients

  • 6 breasts Chicken
  • salt
  • pepper

Instructions

  1. Place chicken breasts in crock pot or slow cooker. Season with salt and pepper, other seasonings as desired.

  2. Set on high for 4 hours.

  3. Remove Chicken from Crock Pot and shred.

  4. Use immediately or refrigerate up to 5 days.
