Chicken Fried Rice and Challenge Success!

It is the end of the week!  Which, is evident by my delayed post.

Our last recipe was Chicken Fried Rice.  A favorite in our house when we get Chinese Food.  But, this fan favorite is so easy to make at home.  This is traditionally a side dish, but we enjoyed it as a main dish, as it has loads of veggies in it balanced with protein and whole grain brown rice.

This was the only recipe that I didn’t use the precooked, shredded chicken.  When you order Chicken Fried Rice in a restaurant, the chicken is always in nice, solid chunks.  Unfortunately, for this case, the texture of slow cooker chicken just doesn’t fit the bill.  So, I diced two chicken breasts into bite sized pieces and sauteed in a little bit of olive oil with salt and pepper.

Once cooked through, I added 3 cups of frozen veggies and about 1 teaspoon of garlic powder.  This is more than typical Chicken Fried Rice recipes that I have tried, but that is just my style.  Any opportunity that I have to up our vegetable intake, I’m on it.

Cook until vegetables are heated through.  Create a well in the center of the pan and add two beaten eggs to the center of the pan.  Scramble those babies up just like you would for breakfast.  I was impatient and scrambled mine a little too quickly.  So, I didn’t really have egg chunks like you normally would, it was more fine, but tasted great.

Finally, I added 4 cups of cooked brown rice that I prepped on the first day.  White Rice would also be fine, but I like the texture of brown rice and the additional fiber that is in the whole grain.  Once heated through, finish with 1/4 cup of low-sodium soy sauce.

This recipe could easily serve six as an entree.  My dad was here for a few days when we made this and with 3 adults, who all had seconds, we still had leftovers.  If you need a little spice in your life, you could top with a little sriracha.

Chicken Fried Rice

Ingredients

  • 2 breasts chicken cubed
  • 1 tsp olive oil
  • 3 cups mixed vegetables
  • 1 tsp garlic powder
  • 2 large eggs
  • 4 cups brown rice cooked
  • 1/4 cup low sodium soy sauce
  • salt and pepper to taste

Instructions

  1. Cook chicken in olive oil over medium high heat.

  2. Add mixed vegetables and garlic powder and stir until heated through, about 3 minutes.  

  3. Make a well in the middle of the pan, add 2 large beaten eggs and scramble.

  4. Add cooked brown rice and low sodium soy sauce to mixture and heat through, about 3 minutes.

  5. Serve and Enjoy!
